Vegan Champurrado (Mexican Masa Hot Chocolate) – the Easy Version for Gringo Kitchens
If you’ve never heard of champurrado, fear not. I never had either, until I was treated to one from a take-out Mexican restaurant. As I felt the warm, cream-thick, chocolatey liquid make it’s way down my throat, and my eyes rolled into the back of my head with delight, I gasped “What is this nectar??” “It’s champurrado,” said my benefactor. “What’s in it?” I asked? “Chocolate, masa, milk..”. (sound of record scratching)… “Milk?” I let my benefactor have the rest of my decidedly *non*-vegan champurrado and vowed to come up with my own vegan version. Not just vegan, but friendly for the average U.S. kitchen and pantry that doesn’t have the more traditional Mexican ingredients on hand.
