I’m sorry that this took me a while to post!

I’m calling this nearly instant, and of course vegan, cold potato soup “nearly vichyssoise” because there are purists out there who would probably have an apoplectic fit if I called it “vichyssoise”, and what’s more, probably rightly so. But if you are not a purist this will hit the vichyssoise spot without all of the hassle of, you know, boiling potatoes and peeling leeks. :~)

For those of you not familiar, a proper vichyssoise is basically cold cream of potato and leek soup (I can practically hear the purists clutching their pearls now). But seriously, that’s what it is. In fact legend has it that the head chef who was working at the Ritz Carlton in New York City in 1917 – the French-born Louis Diat – made the *hot* cream of potato and leek soup that he remembered from his childhood back in France and, because it was summer and hot out, he chilled it.

Voila! Vichyssoise!
